Meatball Stroganoff

The Stroganoff sauce that I give you as a stand-alone recipe goes with almost anything! I have taken the sauce and paired it with meatballs (recipe below). The vegetables shown are sautéed Bok Choy and Oyster Mushrooms. Here is a way to have a million dollar meal with your $3.99 a pound hamburger. For people who are sensitive to dairy and might have to skip on the Stroganoff sauce, these meatballs work just as well with any tomato sauce or gravy you would prefer to use. This is lovely served over rice pilaf, but I did not miss a starch one bit, as you can see from the final plated dinner that is pictured here.

Ingredients

1 pound ground beef

1 medium shallot, small dice

Salt to taste (about 1/2 tsp)

Black pepper to taste (about 1/4 tsp)

4 ounces Halloumi cheese shredded or shredded Pecorino (macros are almost identical)

Directions

  1. Preheat oven to 350 degrees.

  2. Mix beef, shallots, cheese and salt and pepper.

  3. Make 12 meatballs.

  4. Bake, uncovered, for 20 minutes.

  5. Remove from oven and pour your choice of sauce over the meatballs and serve.
