Salsa Cream Cheese Dip

Need something to take to a holiday party? Having friends over for football? This has to be the easiest and one of the most festive recipes at Granny’s Table. If you have a glass bowl, use that to show off the artistry of this dish. (Forgive me — I didn’t think of making this a Granny’s Table recipe until we had eaten most of it and all that was left is what is in the picture!) Easily double or even triple this recipe. And best yet, for those of you who do not care for cilantro, absolutely nothing is missing if you put in fresh parsley instead (and actually, Mr. Granny Keto prefers it that way). You can put out chips for those non-Keto people who will be enjoying it, but I love it with celery and bell pepper strips. Just remember: it’s a dip not a meal!

Ingredients

8 ounce block of full-fat cream cheese, softened to room temperature

1 cup full-fat sour cream

Salt to taste

2 cups diced fresh tomato (about one large)

1/2 cup diced onion (red or white)

1/4 cup diced fresh bell pepper (any color)

1/4 cup chopped parsley or cilantro

Salt and pepper to taste

1 TBS olive oil

Directions

  1. Mix cream cheese, sour cream and salt and put into a bowl.

  2. Mix together all other ingredients.

  3. Top the cheese mixture with the vegetable mixture.
